Cauliflower Crust Pizza

I have been craving pizza lately, but I am trying to eat healthier. I decided to make some cauliflower pizza crust to feed my craving. Although the recipe still has eggs and cheese in it, it still has less calories than normal pizza crust and you get extra servings of veggies. I’ve experimented quite a bit with this recipe and I’ve finally got it right. I can’t wait to share it with you!

Ingredients

1 bag frozen riced cauliflower

2 eggs

1/4 teaspoon black pepper

1 teaspoon dried basil

1/2 teaspoon garlic powder

2 cloves minced garlic

1 cup grated mozzarella cheese

Olive oil

Directions

1) Set oven to 375 degrees

2) Grease a pie pan with olive oil. (If you don’t have a pie pan you can use parchment paper on a sheet pan and shape the “dough” on there. Make sure you still grease it!)

3) Steam the riced cauliflower according to the directions on the bag

4) Squeeze out all of the water from the cauliflower that you can. If there is any water in the cauliflower, there is a risk that the dough won’t harden.

5) Beat eggs and add them to cauliflower in large mixing bowl.

6) Add pepper, basil, garlic powder, minced garlic and cheese to cauliflower. Mix.

7) Put mix into pie pan and put into oven for 20-25 minutes. Take out when golden brown.

Note: If you are going to add toppings and cook pizza after, I suggest you let the crust sit for 5-10 minutes before adding toppings. Once toppings are added cook for 10 additional minutes. Let cool, serve, and enjoy!
