Foil Camping Dinners

These dinners are tasty, easy, and perfect for camping! Last week we camped at Rampart Reservoir for a night and packed our dinners to cook over the fire. These are very simple to make and you can mix up these recipes however you'd like to adjust them to your own taste. Below are the recipes that we made on our camping trip.

For our main courses, we bought some skirt steak, asparagus and broccoli. I cut up the steak and marinated it in worchestershire sauce, minced garlic, salt and pepper overnight. In the morning, I added the broccoli and asparagus after seasoning them with butter, garlic, salt and pepper. I put the steak on top before wrapping everything up in foil. Make sure to double wrap the foil so nothing leaks!

Next, I thinly sliced some russet potatoes and seasoned them with butter, garlic, salt and pepper. (Can you see a theme emerging?) I packed sliced precooked turkey bacon and shredded mozzarella separately to bring with us. I double wrapped the potatoes up in foil to make sure they were secure.

Once we were settled at our campsite and got the fire going, we put the potatoes right into the fire. We cooked them for about 15 minutes by themselves, then opened up the foil to add the bacon and the shredded cheese. We cooked them for about 10 more minutes after that and they turned out perfect! For the steak, we cooked it for about ten minutes in the fire and it turned out perfectly. The vegetables were cooked perfectly too.

Overall, this is a simple, yummy meal that warms you up. It just takes a little preparation and the end results are completely worth it! They aren't pretty, but they sure are delicious! It made our camping experience better to have a warm meal for dinner instead of cold sandwiches or leftovers.
